Our kombucha is made by taking pure organic teas, adding distinctive local flavours, raw organic cane sugar, the symbiotic culture of bacteria and yeast (SCOBY) and a concentrated tea starter liquid.
We brew our organic tea, add in organic raw sugar and place it in vitrified stainless steel drums with boiled filtered water. We add our unique starter liquid and SCOBY and check the brew periodically to gauge its progress.
It's ready when we have a balanced flavour which can take anywhere between 7 - 21 days all depending on the temperature of the controlled environment, the SCOBY size and thickness as well as the strength and amount of starter liquid.
